"Cariboo" apple cider vinegar is made slowly in small batches using the ancient Orleans Method. Our vinegar making technique has been developing for at least a decade and is something that we continue to refine. The name "Cariboo" comes from the part of Canada in which we live. The Cariboo area is plateau and mountain country in central B.C. reaching from Cache Creek to north of Quesnel. "Cariboo" is thought to be a misspelling for caribou, a member of the deer family. There is a rich history of the native peoples of this area, the extensive early exploration for a route to the Pacific Ocean, a gold rush, and a strong ranching industry which continues today.
